Veggie Chili

Chili... always a fridge cleaner upper. Here's our vegetarian version to help you use up all the vegetables lingering around your house. Veggie Chili CHILI 1 Tbsp. olive oil 1 cup onion, diced 1 bell pepper, diced 2 cans diced tomatoes 1 can sweet corn 1 can black beans 1 can kidney beans 1 Tbsp. chili seasoning 1 avocado, diced shredded Mexican cheese SEASONING 1 Tbsp. chili powder 2 tsp. cumin 1 tsp. dried oregano 1 tsp. kosher or sea salt 1 tsp. onion powder 1/4 tsp. garlic powder Heat the oil in a large pot. Saute onion and pepper until soft. Add canned goods. Combine seasoning ingredients in a separate small bowl. Add 1 Tbsp. of seasoning to chili and stir well. Simmer for 20 minutes. S

Corn & Potato Chowder

It's soup season! What better way to use up imperfect vegetables than in a warm, hearty soup. If you're going to peel them, chop them and cook them, who cares what the outside of them looks like anyway? Here's one of our favorite soup recipes that's perfect for dinner and leftover for lunch. Corn & Potato Chowder 1 onion, chopped 2 Tbsp. butter 1 clove garlic, minced 2 carrots, diced 4 Tbsp. flour 8 cups chicken or vegetable broth 5 cups potatoes, diced 2 ears fresh corn or 1 can corn 1 can creamed corn 1 tsp. salt pepper 1 cup evaporated milk 1 tsp. thyme pinch of cayenne pepper 1 Tbsp. corn starch shredded cheddar cheese Melt butter in a large soup pot. Fall Fruit Salad

Light enough for a snack, filling enough for a meal, yummy enough for dessert, this Fall Fruit Salad is so adaptable. It also happens to be a perfect way to use up bruised apples or mushy grapes. 2 medium pears, cored, diced 2 medium crisp apples, cored, diced 1 cup red grapes cut in half lemon juice Yogurt Dressing: 1 cup plain or vanilla flavored Greek yogurt 1 tsp honey 1/2 tsp cinnamon 1/2 tsp vanilla 1/4 tsp nutmeg (optional) walnuts or pecans (optional) Cut fruit and toss with lemon or orange juice to prevent browning. Tomato Cucumber Salad

2 medium tomatoes 1 medium cucumber 1/2 small red onion For Dressing 1 Tbsp. olive or canola oil 1 Tbsp. red wine vinegar or balsamic vinegar 1 tsp. oregano salt and pepper, to taste Peel cucumber, if desired. Thinly slice or cube vegetables into large bowl. Whisk together dressing. Pour over vegetables and toss. For added flavor, let marinate for one hour before serving. Serves 4 to 6 people.
