Artichokes! Many people love them, but most people aren't exactly sure what to do with them. This week I grilled up the ones from last week's box for our Memorial Day feast and they were delicious! I'm excited to share with you this simple recipe. Now I'm not going to lie, they are a bit time consuming to prepare, but once you taste them, I think you'll agree they are well worth the work. Honeydew Times Two

Hi there, friends!! Loved looking through this week's box and catching a glimpse of melon season! Did you get a honeydew? I love incorporating melon into both sweet and savory recipes, and that's what we did here at PIP this week! I made a mixed green salad with the spring onions, melon, blackberries and some crumbled feta cheese. The dressing was an easy pantry hack, one part of your favorite jarred pesto, to two parts of your favorite ranch. The basil element compliments the sweet fruits in the salad. Life is better when you're upBEET. Happy Delivery Day! Does anyone else look forward to Thursdays just for their PIP box? I know I do. There's something so exciting about seeing what is in this week's box and figuring out what yummy things we can come up with! Today I'm using the beets to make a hummus. This hummus is naturally vegan and gluten free! You can spread it on some slices of baguette for an easy appetizer, or serve in a bowl with lots of veggies and pita for dipping. The hummus is made in a blender or food processor, and you can store it in the fridge for 7-10 days, if it even lasts that long! Let's get to it! Another week has flown by and we are really excited about the warmer weather over here at Perfectly Imperfect Produce. The change in seasons means a change in produce and we are really excited to have some new items popping up. Personally, I love blood oranges in a salad or margarita, and the strawberries in the box this week were so beautifully red and really juicy!
