Four Ingredient Strawberry Cake Truffles

Is it just us, or is anyone else in shock that tomorrow is Friday? Between cooking demos, packing your boxes, and teaching little one's about healthy eating, the PIP team cannot believe how fast this week has flown. We had a blast! So excited for the beautiful and ripe strawberries that made their way into our boxes this week, so we wanted to share something a little special. We blended the strawberries with freeze dried strawberries, some coconut flour, and rolled them into little truffle balls, coating them in chocolate, and saving them for a sweet treat snack attack. If you use a vegan chocolate, these little bites are not only vegan, but gluten free! I think kids will love to get into

Kiwi Smoothie

Holy Heat Wave! This extra hot weather lately has us craving everything cold and dreamy, so a smoothie is on the menu! It's always exciting to see fruit in the box and to have kiwis this week was something special. I don't know about you, but I usually just cut the kiwi in half, and scoop out the middle with a spoon, but adding it to a smoothie was also a delicious choice. I love the inside of the kiwi and the little black seeds are still visible in the smoothie too! From the box, I used our orange, mango, and kiwi to make this fruity smoothie! If your mango isn't quite ripe yet, your smoothie might be a little tart, you can add a drizzle of honey if you'd like it sweeter. I peeled and froze

Grilled Garden Salad

Happy Thursday, friends! After seeing Ashley's visit to Morningside Farm and many of us receiving these beautiful heads of organic lettuce in our boxes this week, I knew we should make a garden salad. There is nothing imperfect about this organic lettuce! I'm thankful that a local farm had a surplus and we were happy to take it off of their hands! We hope you love this local treat just as much as we do! With the gorgeous summer weather, grilling veggies seems to come pretty naturally these days. I used the asparagus, grape tomatoes and lemons on the grill to make this Grilled Garden Salad. Grilled lemons caramelize and sweeten, making an awesome substitute for vinegar in a salad dressing. Quick Pickles

This week's box brought some exciting finds like avocados, and some summer staples that we are going to continue to see. If you're like me, you have a bowl of Perfectly Imperfect onions hanging around just waiting to be used in something other than mom's pasta sauce recipe. I took a few of this week's box items and decided to make a quick fridge pickle, aka a "quickle". I used the banana peppers, some white onions, and some cucumbers! You can use this pickle method for anything your heart desires, use it all summer to keep your veggies shelf life longer, and pile them on grilled burgers, salads, or tacos. Also, be careful with the banana peppers. Some are sweet, but some are very, very spicy
