Turning "Ugly" Food into Beautiful Meals

Each week we share a healthy recipe or simple preparation method for one or more of the items inside our box to help you reduce waste and find adventure in your kitchen. Dig in!

Squash Fries

Hi Friends! So excited to see hints of fall in this week's box with all of our beautiful squash! I know summer isn't quite over, and we are sad to say goodbye, but we are always excited to see the new seasonal additions we can bring to you each week! I am such a huge fan of squash, especially delicata! Delicata squash is my personal favorite, and it is so versitile! Did you know you can eat the skin!? Talk about a quick & easy side dish! You can scoop the seeds out and stuff the boats with taco fillings, or even apples and maple, for that fall time flair, or you can cut them into fries-my personal favorite. Try these with your kids, or in your next week's meal prep, and let us know what y

Corn Salad

Hi all! Ashley here. Aubrey's on vacation this week so I got to play in the kitchen today and create a recipe for you with all the colorful items we rescued this week. I didn't have much time, which I guess is often the case these days, so I kept it nice and simple for you. To me, food doesn't have to be fancy to be delicious. In fact, the foods that are best for our bodies are actually the ones that are the most simple. I don't know about you, but I've got lots of corn around here from the last couple of boxes. I couldn't resist featuring it today since this week we rescued that gorgeous organic, non GMO corn from right here in Wooster, Ohio. This is a perfect side dish on a busy late summe

Roasted Tomato Marinara Sauce

I have to be honest, I've always wanted to make my own tomato sauce from whole tomatoes, but after reading method upon method, it always looked too complicated. Something about poaching the tomatoes and giving them an ice bath to peel, de-seed, and then puree? Seems like a lot. With all of these beautiful farm tomatoes we keep getting, I knew there had to be an easier way to conquer this recipe! I wanted to give you a simpler method, something that doesn't require twenty pounds of tomatoes, but if you so happen to get your hands on that many, this recipe will work for you! We're cutting the tomatoes in half, cutting the tiny core out, and roasting with a small amount of onion, olive oil and

Spanish Rice Veggie Burgers

After a week away I am so thrilled to be back with all of these Perfectly Imperfect veggies. I caught up with Ashley yesterday while the team was packing your boxes, and watching her talk about all the local produce she was able to rescue this week was so energizing. The joy she has for this mission, and the pride she brings to your boxes each week is just awesome. I'm so glad we're all on this team together, working toward ending food waste in our area! I hope you're proud, too! I'm a sucker for summer tomatoes, and this week's box is bringing you some cute little ones, or big farm style tomatoes. Either will be perfect for this recipe! I'm excited to share my recipe for spanish rice with

Zucchini Fritters with Garlic Yogurt Sauce

It's already Thursday again! While our couriers have been busy delivering boxes of fresh produce to our customer's homes, I've been busy cooking up a delicious recipe for you. Chances are pretty good that you rolled your eyes when you opened your box today to discover ANOTHER zucchini and yellow squash. Am I right? Believe me, I get it. My husband might make me sleep on the couch if I bring home another crate of all the homeless zucchini that I take in like lost puppy dogs. I can't help it you guys. Our company's mission is to reduce food waste and rule number ONE in my #endfoodwaste handbook is "eat what needs to be eaten." And right now that is all the zucchini and yellow squash with which
