Hi there! We are so happy to be back with you after a Thanksgiving week with friends and family! This week our boxes are full of fall favorites, lots of squash, apples, celery, carrots - the good stuff. When I saw the grapes and celery, all I could think about was my mom's recipe for chicken salad. Growing up, she would make a big batch of chicken salad with shredded chicken breast, grapes, celery, and walnuts. This week, I wanted to make a version, and add some butternut squash for fall flair, because hey, why not!? Did you get a gorgeous, local, organic cabbage in your box this week? How lucky are we, to be able to rescue produce from a local northeast Ohio farm. I'm so excited to create something delicious with it! My mom used to buy the bagged chopped salad mixes at the grocery store, you know what I'm talking about, a mix of chopped lettuce and cabbage, some toppings, and a dressing, all ready to go. Lemon and Roasted Vegetable Pasta Salad

Nothing like a little dreary Ohio weather to make you reach for lemon zest to brighten up a recipe, and hopefully, your day! This week's recipe highlights a few of the vegetables in the box, and feel free to substitute what you got if it's different than what you see here! If you got sweet potatoes, you can add those! If you didn't get onion, add extra eggplant! The cauliflower this week has a few little brown spots, but that is okay! It is actually a sign of oxidation that occurs naturally over time, but is not a sign that the cauliflower is not fresh.
