Turning "Ugly" Food into Beautiful Meals

Fall Chicken Salad

Hi there! We are so happy to be back with you after a Thanksgiving week with friends and family! This week our boxes are full of fall favorites, lots of squash, apples, celery, carrots - the good stuff. When I saw the grapes and celery, all I could think about was my mom's recipe for chicken salad. Growing up, she would make a big batch of chicken salad with shredded chicken breast, grapes, celery, and walnuts. This week, I wanted to make a version, and add some butternut squash for fall flair, because hey, why not!? I also love sneaking in veggies anywhere I can, and I think adding squash to this salad adds a beautiful color. We eat with our eyes first! If you're wondering how to cut up

Maple Dijon Holiday Roasted Veggies

Happy Holidays, Friends! We are so excited to share our Thanksgiving stocked boxes with you this week in preparation for the holiday! We hope you find everything you need, yams, potatoes, squash, celery, carrots, brussels sprouts, and a few other things, too! If you're looking for a new side dish to stand next to your aunts classic green bean casserole, you've come to the right place. We're roasting butternut squash and brussels sprouts on a sheet pan, tossing them in a sweet and tangy mustard glaze, and you're ready to serve! I've always been a huge fan of Brussels sprouts, and it seems like the rest of the world is jumping on board, too. When roasted or fried, they get caramelized and sw

The Asian Chopped Salad is still a favorite of mine, and I knew I wanted to recreate that salad with this weeks Perfectly Imperfect Veggies. I love using as many veggies from the box as I can and adding the crunchy carrots, sweet zucchini, and a little bit of the under-ripe mango (perfect for a sweet

Lemon and Roasted Vegetable Pasta Salad

Nothing like a little dreary Ohio weather to make you reach for lemon zest to brighten up a recipe, and hopefully, your day! This week's recipe highlights a few of the vegetables in the box, and feel free to substitute what you got if it's different than what you see here! If you got sweet potatoes, you can add those! If you didn't get onion, add extra eggplant! The cauliflower this week has a few little brown spots, but that is okay! It is actually a sign of oxidation that occurs naturally over time, but is not a sign that the cauliflower is not fresh. Just trim the edges away, the underneath is perfectly good and ready to be used this week! When I think of pasta salad, I think of my mom'
