This week we got a ton of organic peppers, potatoes and some onions. We seem to always have celery and carrots in the fridge, and to me, that just screams stew! This recipe really is a one pot Perfectly Imperfect wonder, using everything we got in the box! Asian Chicken Lettuce Wraps

Organic boxes went out today, and we know you're going to love what's inside! Avocados, beautiful radishes, Brussels sprouts, and huge heads of organic iceberg lettuce. I love Iceberg lettuce for a crunchy texture! It's the perfect vessel for these Asian Lettuce Wraps, as it holds the toppings well, doesn't wilt easily under the warm chicken, and stays fresh in the fridge with a moistened paper towel. For the filling, I seasoned ground chicken breast with some items I have in my pantry, like soy sauce, sesame oil, salt & pepper. If you want to prep this for lunch for the week, you can keep the cooked chicken separate to reheat, and layer the warm chicken on the lettuce cups and toppings!

I was scrolling through our recipes last night and wishing for warmer weather and all the ripe, juicy tomatoes the summer months brought us. We may not have summer tomatoes for a while, but we do have delicious little grape tomatoes in this week's box, and they're crisp, sweet, and a delicious addition to salads, scrambles and taco toppings. On January 10th we teamed up with Prep Kitchen Cle to host an event featuring our rescued produce, some delicious small bites, and a chance to get to know the blogger community in Cleveland. Not only did we have a great time, but we ate some really delicious things. I wanted to share these two cauliflower-centric appetizers that I whipped up for the guests. Happy New Year, Friends! Hoping you and yours had a wonderful holiday season! Now that it's 2019, we are ready to get back into the swing of things, and what better way to start than with breakfast. If you're like me, you grew up eating instant oatmeal, and there's something so nostalgic about smelling warm cinnamon and apples together in some oats.
