Our girl Aubrey, AKA our Recipe Developer AKA your Personal Chef, is out on a much deserved vacation this week! So we thought it was the perfect opportunity to feature one of our customers' delicious creations using their Perfectly Imperfect Produce! We LOVE seeing all your posts every week showing us how you turn our "ugly" food into beautiful meals. End of Summer: Tomato Toast

End of seasonal veggies means a quick use of scraps in the most delicious way. It's the end of summer and it's nearing the end of tomato season, which is honestly worth waiting months and months for! If you've had tapas, a Spanish variety of mixed small plates, maybe you've had Pan Con Tomate. It sounds so fancy, but it's really just the essentials. Bread, tomatoes, oil and some garlic. This makes one of my very favorite breakfasts and snacks and I'm so happy to share my recipe with you today! To make this tomato topping, we grate the tomato and mix it with olive oil. After the bread is toasted, rub a clove of garlic against the nooks and crannies for a bite of fresh flavor. Let's dig in.

This recipe is perfect for fresh veggies or any leftover veggies you may have. It's national farmers market week, and again, thank you so much for continuing to support local. It is our pride and joy to be able to work directly with local farmers, rescuing seconds and B crops that otherwise wouldn't make it to homes.
