We’re celebrating the peak of stone fruit season with an easy and delicious one bowl snack cake! What exactly is a snack cake, you ask? We like to think of it as a reason to eat cake for breakfast, snack or dessert. Our version is made with whole grain flour, heart-healthy fats and is lighter on the added sugar. It can be eaten warm, with coffee or a glass of cold milk (or maybe a glass of wine?), topped with a dollop of plain yogurt or fresh whipped cream. Fresh Cherry Cocktails: Cherry Lemon Spritzer and Cherry Moscow Mule

We think it’s high time for a cocktail, or a mocktail! This week we’ve got the sweetest, juiciest fresh cherries that deserve some time in the limelight. If you received cherries in your PIP delivery you’ll likely be tempted to devour them by the handful, but we’re suggesting you save some to muddle and mash into a refreshing summer beverage. Both of these cocktails easily become mocktails – simply skip the alcohol, no replacements necessary. They will be just as delicious and refreshing without the booze. If you don’t have a cherry pitter you can remove the pits by either lightly smashing them with the side of a chef’s knife (this can get messy so grab an apron!) or by inserting a chopstick

Summer Berry Power Salad

Summer Berry Power Salad 3 cups crisp arugula, fresh 2 cups spinach, fresh 1 cup blueberries, washed 1 cup canned garbanzo beans, drained 1 cup quinoa, cooked & chilled 1/2 cup sunflower seeds 2/3 cup feta, crumbled Dressing Ingredients: 1 cup fresh blueberries 1⁄4 cup balsamic vinegar 2 Tbsp honey 1 Tbsp lemon juice Pinch of salt and pepper 1⁄2 cup olive oil Instructions: Combine all ingredients for salad and toss together. Blend ingredients for dressing and serve chilled over salad. At the beginning of 2020 we took on a new endeavor to feature some of our favorite local restaurants once a month on our blog. We'd bring them a box of our Perfectly Imperfect Produce, watch them transform it into a delicious dish (Chopped style), and capture the recipe on our blog so our customers could recreate it at home using their own PIP delivery.
