Tomato Cucumber Salad

2 medium tomatoes

1 medium cucumber

1/2 small red onion

 

For Dressing

1 Tbsp. olive or canola oil

1 Tbsp. red wine vinegar or balsamic vinegar

1 tsp. oregano

salt and pepper, to taste

 

Peel cucumber, if desired. Thinly slice or cube vegetables into large bowl. Whisk together dressing. Pour over vegetables and toss. For added flavor, let marinate for one hour before serving. Serves 4 to 6 people.
