Stuffed Spaghetti Squash

 Imagine, a whole bin of spaghetti squash deemed unusable simply because they are dirty and scarred on the outside. Yet, every single one is perfectly firm and fresh on the inside.

 

 

That's when we swooped in to rescue these Perfectly Imperfect squash and carefully placed them in our boxes to send to caring homes across Northeast Ohio. 

 

 

Wonderful, right? But then what? Not sure what the heck to do with that spaghetti squash? Well, that's why we're here; to share with you this delicious idea for turning those "ugly" squash into a beautiful meal.

 

StuffedSpaghetti Squash with Spinach & Mushrooms

 

Here's What You'll Need:

 

1 large spaghetti squash or 2 to 3 small ones

2 Tablespoons olive oil

salt 

pepper

2 cloves garlic, minced

1/2 onion, chopped

1 cup mushrooms, sliced

2 cups baby spinach

1/2 cup marinara sauce

1/2 cup shredded mozzarella cheese

 

What to do: 

Preheat the oven to 450. Wash the squash. Then cut in half lengthwise. Scrape out the seeds. Place squash face up on a rimmed baking sheet or in a casserole dish. Brush the flesh of the squash with 1 Tablespoon of olive oil and sprinkle with a bit of salt and pepper. Roast in oven for 1 hour or until tender. Set aside to cool slightly.

 

 In a large skillet add the remaining olive oil and sauté the garlic, onions and mushrooms. Cook a few minutes until softened and lightly browned. Add the spinach and cook it down a few minutes until wilted. 

 

 

Next, take a fork and use the prongs to scrape the squash to create "noodles." See our Instagram post for a video of this. Next spoon the squash "noodles" into a large bowl. Keep the squash shells and place them back in the casserole dish. Add the vegetable mixture and the marinara sauce to the squash along with a bit of salt and pepper and mix well. Transfer the squash and veggie mixture into the squash shells. Top with a sprinkle of cheese. Bake in the oven for about 30 minutes or until the cheese is melted and bubbly. Turn on the broiler for a minute or two to brown the top. (Although watch it closely or it will get a little too dark, like mine did.)  Oh, well, I guess it looks Perfectly Imperfect this way!
