Fall Chicken Salad

Hi there! We are so happy to be back with you after a Thanksgiving week with friends and family!
This week our boxes are full of fall favorites, lots of squash, apples, celery, carrots - the good stuff.
When I saw the grapes and celery, all I could think about was my mom's recipe for chicken salad.

 

 

Growing up, she would make a big batch of chicken salad with shredded chicken breast, grapes, celery, and walnuts. This week, I wanted to make a version, and add some butternut squash for fall flair, because hey, why not!? I also love sneaking in veggies anywhere I can, and I think adding squash to this salad adds a beautiful color. We eat with our eyes first!

If you're wondering how to cut up a butternut squash, I'm going to walk you through it.
Cut the squash in half, and cut the top and bottom off, too. Set one half, cut side up & down, on a cutting board. With a sharp knife, cut around the edges to remove the outer layer of skin. Do the same thing with the other half, and if it's the bulby-round part, don't forget to scoop the seeds out before you start dicing it into smaller pieces!

 

 

Fall Chicken Salad
Serves 6


Ingredients
2 cups Perfectly Imperfect butternut squash, small dice
3 cups cooked shredded chicken breast
1.5 cups Perfectly Imperfect celery, chopped
1.5 cups Perfectly Imperfect grapes, halved
3 Tablespoons fresh parsley 
1 cup mayo
salt and pepper to taste

 

 

Directions
1. In a sauce pot, boil diced butternut squash in 6 cups of water for 10 minutes. Drain. You want the squash to be just soft enough to eat, but not so mushy that it breaks a part in the salad. Allow it to cool.
2. Combine all ingredients once squash is cool, and season with plenty of salt and pepper.

3. You can serve the salad as is, on a bed of mixed greens, or on small slices of baguette or zucchini for an easy holiday appetizer!
