I know what you're thinking.... "dandelion what now!?"....
Dandelion Pesto! More like yum-o, you know what I mean?
Spring has sprung over here at PIP Headquarters and we are so excited for you to get your colorful box of organic goodness this week! Among the tomatoes, asparagus and other assorted veggies, you might get a bundle of weed lookin' greens! Dandelion Greens!
Dandelion Greens are a mildly bitter green that are packed with vitamin A. They're delicious sautéed, eaten raw in a salad, or blended into a sauce, like this pesto. It's important to clean your dandelion greens really well before eating them, they hide a ton of dirt and sandy particles. Trim the rooted edges, and then thoroughly wash your greens with water until all the particles have been rinsed out. After you wash, you can use them as you see fit! Let's dig in!
Roasted Vegetable & Dandelion Pesto Pasta
1 bundle Perfectly Imperfect Organic Asparagus
1/2 pint Perfectly Imperfect Organic Tomatoes
1/2 lb cooked pasta- I used whole grain
1 bunch Perfectly Imperfect Organic Dandelion Greens, washed
1/4 cup water
1 tablespoon olive oil
2 tablespoons parmesan
2 tablespoons toasted nuts
1 large clove garlic
1. Preheat oven to 425. Line a baking sheet with parchment paper or foil. Cut asparagus into 1 inch pieces, and add asparagus & grape tomatoes to baking sheet. Toss with salt & pepper and roast for 20 minutes, until veggies are golden brown.
2. While the veggies are roasting, let's make the pesto. Combine all ingredients in a blender or food processor and pulse until pesto is smooth and creamy!
3. Add roasted veggies to cooked pasta, toss with pesto, and serve as is, or as a side dish to grilled chicken or fish! This pasta is also awesome cold, tossed into raw spinach or mixed greens for a hearty salad!
