We've had a lot of romaine in our boxes lately and I have a feeling we're going to be seeing a lot of lettuce as the weather continues to get warmer! YES. I love salads, chopping greens for breakfast bowls, adding to wraps, or just using the sturdy leaves as a base for a lettuce wrap!
Lettuce wraps are super versatile! You can fill them with anything you like; veggies, deli meat, grilled chicken, truly anything. I like to think of my lettuce wraps like a hand held salad, add a dressing, some crunchy texture and you can't go wrong.
You start by layering large leaves of romaine all one direction on a piece of parchment paper and next layer another few leaves in the opposite direction, then start adding your fillings. I used assorted veggies from this week's box including mini peppers, tomatoes, cucumbers and a sprinkle of feta cheese.
Use the parchment paper as your guide rolling the wrap into itself and once it's all wrapped, cut the wrap in half, paper and all, and pull the paper to the side as you eat it! Let's dig in!
Perfectly Imperfect Lettuce Wraps
8 Perfectly Imperfect romaine leaves
1/4 cup Perfectly Imperfect cucumber, sliced thinly
1/4 cup Perfectly Imperfect mini sweet peppers, sliced thinly
1/4 cup Perfectly Imperfect tomato, sliced thinly
2 T crumbled feta
S & P to taste
1. On a sheet of parchment, arrange 4 leaves vertically, then lay 4 more leaves over the top horizontally.
2. Layer remaining veggies and cheese over the lettuce leaves and season with salt & pepper.
3. Roll lettuce wrap, rolling away from you, using paper to press the wrap tight and cut in half once fully rolled. Eat as is or dip in your favorite salad dressing!
