Watermelon Salad

I can't be the only one to feel that rush of summer excitement when I saw the little watermelon appear in my organic box this week! These cute little watermelons are perfect to toss into salad, not quite sweet and juicy just yet, so adding other flavors really works.

I'm showing you my favorite way to cut a watermelon, no matter the size. Cut the melon in half and place cut sides down on the cutting board. Cut it into one inch wide vertical slices and then rotate, cutting the same way again, creating large sticks of watermelon with the rind being a convenient holding spot so as not to get your hands too messy! What's your favorite way to cut melon?



I'm mixing the watermelon with some organic cucumber, cubes of feta, red wine vinegar and olive oil, salt and pepper! Thinly sliced red onion and mint are also awesome additions to this salad if you happen to have them on hand! Let's dig in!



Watermelon Salad
Serves 4
1/2 Perfectly Imperfect watermelon, cubed
1/2 Perfectly Imperfect cucumber, sliced
1/3 cup cubed feta
2 T red wine vinegar
2 T olive oil

S & P to taste



1. Cube melon and add to a large mixing bowl. Add cucumber, feta, vinegar and olive oil, mix thoroughly. Season with salt & pepper to taste and enjoy!
