Raspberry Overnight Oats

We're getting BERRY CRAZY over here at PIP HQ.
Lot's of delicious things in our organic boxes, but we are particularly eager to use the raspberries quickly! They're extra ripe, a beautiful color and will make the perfect addition to these fluffy berry overnight oats, if you can keep yourself from just eating them out of the container! We won't hold it against you!

If you haven't made overnight oats, it's really as easy at it seems. The "overnight" part does all the work while you sleep!

 

 

The ratio is simple, equal parts rolled oats to liquid, add some vanilla and a fruit of your choice, and even add some yogurt if you have it in the fridge! Mix it all together, put servings in the fridge and the next morning you're ready to grab breakfast on your way out the door. I like to make several servings at a time to grab throughout the week! Let's dig in!

Raspberry Overnight Oats
Serves 4
Ingredients
1 container Perfectly Imperfect raspberries
1 cup rolled oats
1 cup greek yogurt
1/2 cup almond milk

1 T vanilla extract

 

 

Directions
1. Mix oats with 1/2 cup greek yogurt, the almond milk, vanilla and 3/4th of the berries- saving some for the topping. Combine and distribute among four containers. 

2. Top with dollops of remaining yogurt and a few of the leftover berries. Cover and refrigerate for at least 4 hours. Enjoy!
