PIP Lunchbox

September 12, 2019

It's back to school season and if you've got kiddos in school, or you pack your lunch for work, we've got some ideas for you! We know it's hard to hide veggies from your kids, but we have faith in a little cream cheese and a tortilla this week!

Our boxes are full of goodies; ground cherries (peel the outside and eat the inside), lots of sweet and spicy peppers, tomatoes, zucchini, blackberries, watermelon, string beans, apples and more!

We layered some of our thinly sliced zucchini and peppers on a whole wheat wrap with some other goodies for a pin wheel. You can use whatever veggies you or your kiddos like. Add some deli meat and a slice of cheese if you prefer. It's super versatile and a fun way to eat a "sandwich". Raw zucchini has a really great texture and no strong flavor, so I feel it's one of the best veggies to sneak in for kids. Feel free to peel the skin if they don't want to eat anything green! Cut up fruit and berries make a sweet treat, too! Can you ever beat the classic PB & celery combo? Let's dig in!
