Orange Ginger, Green Mint & Cardamom Banana Smoothies

This week's PIP box was filled with all sorts of summer flavors. And as the temperatures rise we are craving cool, colorful smoothies! Truly, smoothies are one of the most perfect ways to use up imperfect fruits and veggies. And the possibilities are endless! We packed in as many goodies as we could fit into our blender and, in our opinion, the results are more mouth watering than dessert! One box, three nutritious and delicious smoothies!

Though we make smoothies all year round for quick meals, snacks and to use up produce that’s nearing the end of its useful life, summer seems especially smoothie friendly, doesn’t it? So much fresh everything! I don’t like things too sweet, so I typically look for a way to keep mine a little more grounded by adding greens, celery, nuts, spices and seeds. For these three recipes, I focused on flavors that I've been drawn to lately and aimed for bright and flavorful for the mint green and the ginger ones, and for hearty and comforting with the banana cardamom, which is honestly enough for a whole breakfast on the run. As with everything I make, these are completely open to your interpretation - another great thing about smoothies. Feel free to add in a cuke, some spinach, or more or less of something. Smoothies are very, very forgiving. We love them for that.

Orange Ginger Smoothie

1/2 large PIP mango, peeled

2 PIP peaches

1/2 large PIP carrot

1" ring of PIP pineapple, peeled and cored

1 - 1 1/2 Tbsp. fresh ginger

1 cup cold water

a dozen ice cubes

Makes 2 servings.

Green Mint Smoothie

1/4 PIP honeydew

1 PIP kale leaf with rib trimmed out

1 PIP green apple cored and unpeeled

12 mint leaves

1 c. cold water or juice (sweeter)

a dozen ice cubes

Makes 2 servings.

If you prefer a sweeter smoothie, substitute one cup of pineapple, apple or orange juice instead of the water.

Cardamom Banana Smoothie

2 PIP bananas

1 1/2 cups almond milk

1/2 tsp. ground cardamom

1/2 tsp. ground cinnamon

2 handfuls of plain almonds

4 Tbsp. rolled oats

1/4 cup tahini

2 tsp. hemp hearts

2 tsp. ground flax

6 ice cubes

Makes 2 servings.

If you'd like an extra indulgence you could add a drizzle of chocolate to this!
