We’re celebrating the peak of stone fruit season with an easy and delicious one bowl snack cake! What exactly is a snack cake, you ask? We like to think of it as a reason to eat cake for breakfast, snack or dessert. Our version is made with whole grain flour, heart-healthy fats and is lighter on the added sugar. It can be eaten warm, with coffee or a glass of cold milk (or maybe a glass of wine?), topped with a dollop of plain yogurt or fresh whipped cream. If we haven’t convinced you yet, this snack cake features the beautiful peaches and plums from this week’s PIP haul and, to be honest, we really can’t think of a better way to celebrate summer fruit than with a sweet treat.
This easy cake requires just one bowl and takes about 15 minutes to prep and 35 minutes to bake. If you don’t have white whole wheat flour you can substitute all purpose flour or use half all purpose flour and half whole wheat flour. Feel free to use a mix of any stone fruits you like, including nectarines and apricots.
Stone Fruit Snack Cake

1 ½ cups white whole wheat flour (spooned and leveled*)
½ teaspoon sea salt
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon ground cloves
½ cup avocado oil (or other neutral-flavored oil)
½ cup unsweetened applesauce
½ cup honey
1 teaspoon vanilla
2-3 Perfectly Imperfect plums and/or peaches, thinly sliced
1 tablespoon sugar
Fresh whipped cream or plain yogurt, optional
*Be sure not to pack flour or scoop flour with your measuring cup. This can result in dense and dry baked goods. First, lightly fluff the flour with a fork. Next, spoon the flour into your measuring cup until it forms a mound, then drag a butter knife across the top to level it.
Preheat oven to 350 degrees. Line an 8x8 inch square pan with parchment paper.
In a large bowl, whisk together the flour, salt, baking powder, baking soda and spices. Create a well in the center of the flour and pour in the oil, applesauce and honey. Using a wooden spoon, stir a few times to incorporate the ingredients, but do not mix well. Drop in the eggs and vanilla and continue to stir until ingredients are completely combined, but do not overmix.
Pour the batter into the prepared pan. Top with the sliced peaches and plums in a single layer, pressing slightly into the batter. Sprinkle the sugar evenly over the top.
Bake in a pre-heated oven for 30-35 minutes, rotating once halfway through, or until the top is golden brown. Allow to cool in pan for at least 10 minutes before cutting into 9 or 12 pieces. Serve topped with whipped cream or plain yogurt, if desired.
