Did someone say cake for breakfast? Made famous on TikTok and trending on Instagram, baked oats are the latest trendy food obsession we couldn’t wait to try. Different from baked oatmeal, this method calls for blending rolled oats with a banana, milk, egg, maple syrup, and baking powder to make a smooth batter before baking. The end result is a tender, lightly sweetened cake that’s best eaten warm straight out of the oven, topped with fresh berries, chocolate chips, or chopped nuts.
We love this breakfast idea, especially because it can be customized in lots of ways using fresh produce from your PIP box! We’ve included the base recipe below, but there are so many ways to jazz it up. Stir in chopped apples, cinnamon, and walnuts. Fold in finely chopped pineapple or mango and shredded coconut. Blend with cocoa powder, then stir in chocolate chips, chopped banana and a drizzle of peanut butter. Or how about mixing in some grated carrot or zucchini? The options are truly endless!

1 cup old fashioned rolled oats
½ cup regular, nut, or soy milk
2 tablespoons maple syrup
1 teaspoon vanilla
1 teaspoon baking powder
Pinch sea salt
Chopped apples, pineapple, strawberries, banana
Raspberries or blueberries
Grated carrot or zucchini
Chopped nuts or seeds
Preheat oven to 375 degrees. Grease two 8 to 10 ounce ramekins.
Combine all ingredients in a blender. Cover and run the motor on highest setting for 30 seconds until batter is very smooth. Stir in any optional mix-ins, then divide batter between ramekins and set on a baking sheet. Bake in preheated oven for 20 to 25 minutes, or until set. Allow to cool for 5 minutes before serving.
