Vegetable Graveyard Pizza

Happy Halloween, PIP family!


We rescued some pretty spooktacular produce this week! Between the gnarly rainbow carrots, striped bell peppers, spiky romanesco, purple turnip and blood red pomegranate, we’ve got everything to “lift your spirits” this Halloween weekend.



Because our Halloween gatherings will likely be much smaller this year, this fun and festive Spooky Vegetable Patch Pizza makes just enough for the family or a small group of people. It’s perfect to accompany a light appetizer-style dinner before walking the neighborhood, or for a post trick-or-treat snack. It can be prepared a couple hours in advance, so get the kids involved with decorating it to pass the time before activities begin!

Veggie Graveyard Pizza

Active time: 30 Min.

Total time: 60 Min.

Servings: 8 pieces

Ingredients:

Pizza base:

8-ounce can refrigerated crescent roll dough

6 ounces cream cheese, softened

½ cup 2% or whole milk plain Greek yogurt

¼ teaspoon dried dill

¼ teaspoon garlic powder

⅛ teaspoon onion powder

⅛ teaspoon paprika

⅛ teaspoon salt

⅛ teaspoon black pepper


Vegetable topping options:

Perfectly Imperfect carrots, cut into ribbons using a vegetable peeler or spiralizer

Perfectly Imperfect romanesco, cut into bite-size pieces

Perfectly Imperfect turnip or radish, thinly sliced into moons for “gravestones”

Perfectly Imperfect grape tomatoes, halved for “bug bodies”

Perfectly Imperfect bell peppers, cut into thin strips for “bug legs”

Olives, for “spider bodies” and “spider legs”


Directions:

Preheat oven to 375 degrees. Spray a 13x9 inch pan with nonstick cooking spray or line with parchment or foil. Unroll the crescent roll dough and press it into the bottom and partially up the sides of the prepared pan. Pinch together the seams. Bake in preheated oven for 9-11 minutes, or until golden brown. Allow to cool completely before topping (refrigerate for quicker cooling).


In a medium bowl combine the softened cream cheese, Greek yogurt, dried herbs and spices, salt and pepper. Beat until well-mixed and creamy using a hand mixer or wooden spoon. Spread in an even layer on the baked and cooled crust. Leave ½-inch crust border for easier handling. Top with assorted prepped vegetables. Serve immediately or refrigerate up to two hours. Cut into 8 pieces.
